In a saucepan, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.

Meanwhile, drain the mandarin oranges and chop the red bell pepper, green onions, and fresh cilantro.

In a large bowl, combine cooked couscous, mandarin oranges, red bell pepper, green onions, cashews, and fresh cilantro.

In a small bowl, whisk together lime juice, soy sauce, sesame oil, salt, and black pepper.

Pour the dressing over the couscous mixture and toss to combine.
