Makloubeh is a traditional Middle Eastern dish that translates to ‘upside-down’ in Arabic, referring to the way it is served by flipping the pot onto a serving plate.

  1. Rinse the basmati rice and soak it in water for 30 minutes.
  2. Cut the cauliflower into florets.
  3. Slice the eggplant and onion.
  4. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  5. Add the sliced eggplant and cook until golden brown. Remove from the pot and set aside.
  6. In the same pot, add the remaining olive oil and sauté the onion until translucent.
  7. Add the garlic, ground cumin, ground coriander, and ground turmeric. Stir for 1 minute.
  8. Drain the soaked rice and add it to the pot. Stir well to coat the rice with the spices.
  9. Add the cauliflower florets and sliced tomatoes.
  10. Pour enough water to cover the ingredients. Season with salt and black pepper.
  11. Bring the pot to a boil, then reduce the heat to low and cover. Cook for 30 minutes or until the rice is cooked and the cauliflower is tender.
  12. Invert the pot onto a serving plate and let it rest for 10 minutes.
  13. Garnish with pine nuts and fresh parsley.
  14. Serve hot and enjoy!
