Remove the loquat pits and set aside.

In a saucepan, heat almond milk over medium heat until warm.

Add agar agar powder and stir until dissolved.

Add maple syrup and vanilla extract, and stir well.

Place loquat pits in a steamer basket and pour the almond milk mixture over them.

Steam for 10 minutes.

Remove from heat and let it rest for 2 hours.

Garnish with sliced almonds and fresh mint leaves.
