Peel and chop the carrots, onion, and ginger.

In a large pot, heat some oil and sauté the chopped onion and ginger until fragrant.

Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the carrots are tender.

Remove from heat and let the soup cool slightly.

Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper. Heat over low heat until warmed through.
