Lentil Soup With Swiss Chard
Lentils are a great source of plant-based protein and are rich in fiber, iron, and folate.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the lentils and set aside.

Chop the onion, carrot, celery, and garlic.

Heat olive oil in a large pot over medium heat.

Add the chopped onion, carrot, celery, and garlic to the pot and sauté until softened.

Add cumin, paprika, salt, and black pepper to the pot and cook for another minute.

Add lentils, vegetable stock, and tomato paste to the pot. Bring to a boil.

Reduce heat to low and simmer for 30-40 minutes, or until the lentils are tender.

While the soup is simmering, remove the stems from the Swiss chard and chop the leaves.

Add the chopped Swiss chard leaves to the pot and cook for an additional 5 minutes.

Stir in lemon juice.
