Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 14.

Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add onion, carrot, celery, and garlic. Cook until vegetables are softened.

Add tomato paste, cumin, paprika, bay leaf, salt, and black pepper. Stir well.

Add lentils and vegetable broth. Bring to a boil.

Reduce heat and simmer for 25-30 minutes, or until lentils are tender.

Remove bay leaf and discard.

Serve hot, garnished with fresh parsley.
