Chili con carne, a traditional Mexican dish, inspired the creation of lentil chili as a vegetarian alternative.

  1. Rinse lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic cloves. Sauté until onion becomes translucent.
  4. Add diced bell pepper and sliced carrots. Cook for another 5 minutes.
  5. Stir in chili powder, cumin powder, paprika, salt, and pepper.
  6. Add rinsed lentils, canned diced tomatoes, and vegetable broth. Bring to a boil.
  7. Reduce heat to low and simmer for 30 minutes, or until lentils are tender.
  8. Remove from heat and let it rest for 10 minutes.
  9. Serve hot with fresh cilantro and lime wedges.
