  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  2. Add mushrooms and cook for another 5 minutes.
  3. Add lentils, barley, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 40 minutes.
  4. Remove bay leaves and garnish with fresh parsley before serving.
