Rinse the lentils and 7-grain mix under cold water.

In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Cook until vegetables are softened.

Add cumin, paprika, turmeric, salt, and black pepper. Stir well.

Add lentils, 7-grain mix, vegetable broth, and tomato paste. Stir to combine.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until lentils and grains are tender.

Stir in fresh parsley and lemon juice.
