  2. In a food processor, pulse mushrooms, zucchini, carrot, onion, and garlic until finely chopped.
  3. Heat 1 tablespoon of olive oil in a pan and sauté the vegetable mixture until softened.
  4. In a large bowl, combine cooked quinoa, sautéed vegetables, oats, breadcrumbs, flaxseed meal, soy sauce, paprika, cumin, salt, and black pepper. Mix well.
  5. Form the mixture into patties and refrigerate for 5 minutes.
  6. Heat the remaining olive oil in a pan or grill pan over medium heat.
  7. Cook the veggie burgers for about 4-5 minutes on each side until golden brown.
  8. Toast the buns if desired and assemble the burgers with lettuce, tomato, and onion slices.
