Press tofu to remove excess water, then cut into cubes.

In a large pan, heat vegetable oil over medium heat.

Add lemongrass, garlic, and ginger to the pan, and sauté for 2 minutes.

Add tofu and cook until lightly browned, around 5 minutes.

Add carrots, green beans, red bell pepper, and mushrooms to the pan, and stir-fry for 5 minutes.

In a small bowl, mix soy sauce, lime juice, salt, and black pepper.

Pour the sauce over the vegetables and tofu, and simmer for 5 minutes.

Remove from heat and let it rest for 5 minutes.
