Granola was originally invented as a health food in the late 19th century by Dr. James Caleb Jackson, who called it ‘granula’.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 325°F (165°C).

In a large bowl, combine the rolled oats, almonds, cashews, pumpkin seeds, sunflower seeds, and coconut flakes.

In a small saucepan, heat the maple syrup, coconut oil, vanilla extract, and ground cinnamon over low heat until the coconut oil is melted.

Pour the liquid mixture over the dry ingredients and mix well to coat.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until golden brown.

Remove from the oven and let cool completely.

Once cooled, stir in the dried cranberries and dried apricots.

Store in an airtight container.

Serve as a breakfast cereal with milk or yogurt, or enjoy as a snack.
