Preheat the oven to 350°F (175°C).

In a mixing bowl, combine peanut butter, coconut sugar, and vanilla extract. Mix well.

In a separate small bowl, mix flaxseed meal and water. Let sit for 5 minutes to thicken.

Add the flaxseed mixture to the peanut butter mixture and mix until well combined.

In another bowl, whisk together almond flour, baking powder, and salt.

Gradually add the dry ingredients to the peanut butter mixture, mixing until well combined.

Roll the dough into 1-inch balls and place on a baking sheet lined with parchment paper.

Press each ball down gently with a fork to create a crisscross pattern.

Bake for 10 minutes or until the edges are golden brown.
