Preheat the oven to 425°F (220°C).

Cut the zucchini, red bell pepper, yellow bell pepper, and red onion into bite-sized pieces.

In a large bowl, combine the vegetables with sun-dried tomatoes, olive oil, dried oregano, salt, and black pepper. Toss until well coated.

Spread the vegetable mixture onto a baking sheet in a single layer.

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly charred.
