Kitchiri
Kitchiri is a traditional Indian dish that is often prepared during festivals and considered to be a comfort food. It is believed to have originated in the Indian subcontinent over 700 years ago.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the rice and lentils separately.

In a pot, heat ghee and sauté onions until golden brown.

Add ginger and garlic, sauté for a minute.

Add tomatoes and cook until they soften.

Add turmeric, cumin, coriander, red chili powder, and salt. Mix well.

Add the rinsed rice and lentils to the pot and mix with the spices.

Pour in water and bring to a boil.

Reduce heat, cover the pot, and let it simmer for 20-25 minutes or until the rice and lentils are cooked.

Once cooked, sprinkle garam masala and garnish with fresh cilantro.

Let it rest for 5 minutes before serving.
