Sloppy Joes were originally made with ground beef, but this vegetarian version uses lentils as a delicious and nutritious alternative.

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, carrot, and green bell pepper. Sauté until vegetables are tender.
  3. Add lentils, vegetable broth, tomato paste, Worcestershire sauce, brown sugar, Dijon mustard, chili powder, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until lentils are tender.
  5. Remove from heat and let it rest for 5 minutes.
  6. Toast the hamburger buns, if desired.
  7. Spoon the lentil mixture onto the bottom half of each bun.
  8. Cover with the top half of the bun. Serve and enjoy!
