  1. In a medium saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.
  3. Add ground cumin, ground coriander, ground cinnamon, salt, and black pepper to the skillet. Stir well to combine.
  4. Add chickpeas, dried apricots, and golden raisins to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Fluff the couscous with a fork and add it to the skillet. Stir well to combine all the ingredients.
  6. Remove from heat and stir in fresh parsley and fresh mint.
  7. Serve the couscous with Moroccan spices with a squeeze of lemon juice on top.
