Preheat the oven to 350°F (175°C).

Cut the kabocha squash in half, remove the seeds, and roast in the oven until soft. Scoop out the flesh and mash it.

In a large bowl, combine the mashed kabocha squash, flour, baking powder, cinnamon, nutmeg, salt, and sugar. Mix well.

In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Fold in the chopped walnuts.

Pour the batter into a greased loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer the bread to a wire rack to cool completely before slicing and serving.
