Jewelled Layered Salad is inspired by the traditional Middle Eastern dish called ‘Tabbouleh’, which is a parsley and bulgur salad.

In a large bowl, layer the mixed salad greens as the base.

Chop the cherry tomatoes, cucumber, carrots, bell peppers, red onion, and avocado into bite-sized pieces.

Add the chopped vegetables on top of the salad greens, arranging them in colorful layers.

Sprinkle pomegranate seeds, toasted almonds, and crumbled feta cheese over the vegetables.

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper to make the dressing.

Drizzle the dressing over the salad.
