Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, sliced carrots, and celery stalks. Cook for 5 minutes until vegetables are slightly softened.

Add cumin powder, paprika, salt, and black pepper. Stir well.

Add lentils, vegetable broth, diced tomatoes, and bay leaves. Bring to a boil.

Reduce heat to low, cover, and simmer for 25 minutes or until lentils are tender.

Remove bay leaves and adjust seasoning if needed.

Serve hot, garnished with fresh parsley.
