  1. Preheat the oven to 400°F (200°C).
  2. Cut off the top of the pumpkin and scoop out the seeds and pulp.
  3. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika.
  4. Brush the inside and outside of the pumpkin with the olive oil mixture.
  5. Place the pumpkin on a baking sheet and bake for 30-40 minutes, or until the flesh is tender.
  6. Remove from the oven and let it rest for 10 minutes.
  7. Sprinkle fresh parsley on top before serving.
  8. Serve the Jack O Lantern as a spooky appetizer for Halloween.
