Vegan Manicotti

Preheat the oven to 375°F (190°C). Cook the manicotti shells according to package instructions. Drain and set aside.

In a large bowl, crumble the tofu and add the spinach, vegan cheese, garlic powder, onion powder, dried basil, dried oregano, salt, and black pepper. Mix well.

Stuff the cooked manicotti shells with the tofu and spinach mixture.

Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed manicotti shells in the dish.

Pour the remaining marinara sauce over the stuffed shells.

Cover the baking dish with foil and bake for 25 minutes.

Remove the foil and bake for an additional 5 minutes, or until the vegan cheese is melted and bubbly.
