  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add garlic and green onions, and sauté until fragrant.
  3. Add rice to the pot and stir to coat it with the oil. Cook for 2 minutes.
  4. Add vegetable broth, salt, and pepper to the pot. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Meanwhile, blanch the spinach in boiling water for 1-2 minutes. Drain and squeeze out excess water.
  6. Once the rice is cooked, remove from heat and let it rest for 5 minutes. Fluff with a fork.
  7. In a blender or food processor, blend together spinach, cilantro, and lime juice until smooth.
  8. Stir the green mixture into the cooked rice until well combined.
  9. Serve hot and enjoy!
