Italian Veggie Rolls
Lasagna, a popular Italian dish, is traditionally made with layers of pasta, meat, and cheese. However, this recipe puts a vegetarian twist on the classic dish by using lasagna sheets to roll up a delicious combination of veggies and flavors.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Preheat the oven to 375°F (190°C).

Slice the eggplant, zucchini, and red bell pepper into thin strips.

In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for a minute.

Add mushrooms and sauté until they release their moisture.

Add spinach and cook until wilted. Season with salt, black pepper, and Italian seasoning.

Spread tomato sauce evenly on each lasagna sheet.

Layer the sliced vegetables, sautéed mushrooms and spinach mixture, mozzarella cheese, and fresh basil leaves on top of each lasagna sheet.

Roll up the lasagna sheets tightly and place them in a baking dish.

Drizzle the remaining olive oil on top of the rolls.

Bake in the preheated oven for 15 minutes.

Remove from the oven and let it rest for 5 minutes.
