Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.

Add tomatoes, lentils, vegetable broth, bay leaves, dried thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are cooked.

Remove bay leaves and stir in fresh parsley.

Serve hot, garnished with grated Parmesan cheese.
