In a medium saucepan, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add carrots, bell pepper, and zucchini to the skillet. Cook for 5 minutes, stirring occasionally.

Stir in diced tomatoes, tomato paste, cumin, coriander, paprika, salt, and black pepper. Simmer for 15 minutes.

In a serving dish, place a bed of spiced couscous. Top with the simmered vegetables.

Garnish with fresh parsley and drizzle with lemon juice.
