  1. Soak the dried chickpeas in water overnight.
  2. Drain the chickpeas and transfer them to a food processor.
  3. Add the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper to the food processor.
  4. Pulse the mixture until well combined and slightly coarse.
  5. Transfer the mixture to a bowl and refrigerate for 30 minutes.
  6. Shape the mixture into small balls or patties.
  7. Roll the falafel balls in sesame seeds.
  8. Heat vegetable oil in a pan over medium heat.
  9. Fry the falafel until golden brown and crispy on all sides.
  10. Remove from the pan and drain on paper towels.
  11. Serve hot with pita bread, tahini sauce, and your favorite toppings.
