  1. Cut the eggplant into small pieces.
  2. Heat oil in a pan and fry the eggplant until golden brown.
  3. Remove the fried eggplant from the pan and keep it aside.
  4. In the same pan, add chopped onions and sauté until golden brown.
  5. Add chopped tomatoes, green chili, ginger, and garlic. Cook until the tomatoes are soft.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
  7. Add the fried eggplant to the pan and mix everything together.
  8. Cover and cook for 5 minutes.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with rice or roti.
