Preheat the oven to 350°F (175°C).

In a food processor, grind the sunflower seeds until fine.

In a mixing bowl, combine the ground sunflower seeds, almond flour, coconut flour, baking powder, and salt.

In a separate bowl, mix together the maple syrup, coconut oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix well.

Form the dough into small balls and place them on a baking sheet lined with parchment paper.

Press down on each ball to flatten it into a cookie shape.
