Okra, also known as lady’s finger, is a popular vegetable in Indian cuisine and is rich in dietary fiber and antioxidants.

  1. Wash and dry the okra. Cut off the ends and slit them lengthwise without cutting through.
  2. Heat oil in a pan and fry the okra until they are slightly browned. Remove from the pan and keep aside.
  3. In the same pan, add more oil if needed and sauté the onions until golden brown.
  4. Add ginger, garlic, and green chili and sauté for a minute.
  5. Add tomatoes and cook until they are soft and mushy.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, amchur powder, and salt. Mix well.
  7. Stuff the fried okra with this masala mixture.
  8. Cook the stuffed okra on low heat for 10-15 minutes, stirring occasionally.
  9. Garnish with fresh coriander leaves and serve hot with roti or rice.
