  1. Rinse and soak the red kidney beans and black beans overnight.
  2. Drain the soaked beans and transfer them to a crock pot.
  3. Peel and chop the sweet potatoes into small cubes.
  4. Chop the onion, garlic, and tomatoes.
  5. In the crock pot, add the sweet potatoes, onion, garlic, ginger, tomatoes, turmeric powder, cumin powder, coriander powder, garam masala, salt, and water.
  6. Stir well to combine all the ingredients.
  7. Cover the crock pot and cook on high heat for 4 hours or on low heat for 8 hours.
  8. Once cooked, mash some of the sweet potatoes to thicken the curry.
  9. Garnish with fresh coriander and lemon juice.
  10. Let it rest for 10 minutes before serving.
