Rinse the quinoa under cold water and drain.

In a medium saucepan, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it rest for 5 minutes.

Meanwhile, heat olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.

Add ground cumin, ground coriander, turmeric powder, and cayenne pepper to the skillet. Cook for 1-2 minutes, stirring continuously.

Stir in the cooked quinoa, raisins, and pine nuts. Cook for another 2-3 minutes until everything is well combined.

Season with salt and lemon juice. Mix well.

Garnish with fresh cilantro and serve hot.
