  1. Peel and chop the sweet potato into small cubes.
  2. Finely chop the onion, garlic, and ginger.
  3. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  4. Add the curry powder and cook for another minute.
  5. Add the sweet potato cubes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the sweet potatoes are soft.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Return the soup to the pot and stir in the coconut milk. Bring to a simmer and cook for another 5 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve the soup hot, garnished with fresh coriander and a squeeze of lime juice.
