  1. Boil the potatoes until they are cooked but still firm. Peel and cut them into cubes.
  2. Heat oil in a pan and add chopped onions. Saute until golden brown.
  3. Add ginger and garlic paste, and saute for a minute.
  4. Add chopped tomatoes and cook until they turn soft.
  5. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
  6. Add the boiled potato cubes and mix gently until the spices coat the potatoes evenly.
  7. Cook for 5 minutes on medium heat, stirring occasionally.
  8. Sprinkle garam masala and garnish with fresh coriander leaves.
  9. Serve hot as an appetizer or side dish.
