Heat vegetable oil in a large pan over medium heat.

Add chopped onion, garlic, and ginger. Sauté until the onion turns translucent.

Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.

Add chopped tomatoes and cook until they soften.

Add diced eggplant and zucchini. Stir-fry for a few minutes.

Cover the pan and simmer for 20-25 minutes until the vegetables are cooked through.

Sprinkle garam masala and mix well.
