  4. Add ginger, garlic, and green chili. Cook for another minute.
  5. Add the chopped tomatoes and cook until they are soft.
  6. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
  7. Add the fried eggplant and mix until well coated with the spices.
  8. Cook for another 5 minutes, stirring occasionally.
  9. Sprinkle garam masala and garnish with fresh coriander leaves.
  10. Serve hot with rice or roti.
