Preheat the oven to 350°F (175°C).

In a bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.

In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Line a baking sheet with parchment paper.

Drop spoonfuls of the batter onto the baking sheet and flatten them into cookie shapes.

Bake for 10 minutes, then remove from the oven and let cool completely.

Once the cookies are cool, scoop a generous amount of vegan ice cream onto one cookie and place another cookie on top to create a sandwich.

Repeat with the remaining cookies and ice cream.

Place the ice cream sandwiches in the freezer for at least 1 hour to firm up.
