Preheat the oven to 350°F (175°C).

In a mixing bowl, combine almond flour, cocoa powder, maple syrup, coconut oil, and vanilla extract. Mix well.

Form the dough into 24 small balls and place them on a baking sheet lined with parchment paper. Press the dough balls down with a fork to create a cookie shape.

Bake for 10 minutes, then remove from the oven and let them cool on the baking sheet for 5 minutes. Transfer the cookies to a wire rack and let them cool completely.

In a small bowl, mix creamy peanut butter, dark chocolate chips, almond milk, coconut butter, coconut sugar, and sea salt. Spread the filling on one cookie and top it with another cookie to create a sandwich.

Repeat for all cookies. Place the sandwiches in the refrigerator to set for 30 minutes before serving.
