Boil the potatoes until tender, then peel and mash them.

In a mixing bowl, combine the mashed potatoes, cornstarch, gluten-free flour, coconut oil, and stevia. Mix well to form a smooth dough.

Divide the dough into 8 equal portions.

Take a plum, remove the pit, and place it in the center of a dough portion. Wrap the dough around the plum, sealing it completely.

Repeat with the remaining plums and dough portions.

Bring a large pot of water to a boil. Add a pinch of salt.

Carefully drop the plum dumplings into the boiling water and cook for about 15-20 minutes or until they float to the surface.

While the dumplings are cooking, melt some coconut oil in a pan and add the breadcrumbs. Toast the breadcrumbs until golden brown.

Remove the cooked dumplings from the water using a slotted spoon and roll them in the toasted breadcrumbs.

Sprinkle the plum dumplings with ground cinnamon.
