Peel and grate the potatoes. Squeeze out excess water.

Finely chop onion, green chilies, and cilantro.

In a mixing bowl, add grated potatoes, chopped onion, green chilies, cilantro, chickpea flour, rice flour, cumin seeds, coriander powder, red chili powder, turmeric powder, baking soda, and salt. Mix well.

Gradually add water and mix until a thick batter-like consistency is achieved.

Heat oil in a deep frying pan.

Drop spoonfuls of the potato batter into the hot oil and fry until golden brown and crispy.

Remove the fritters from the oil and drain on paper towels.
