In a large mixing bowl, combine the Rice Krispies cereal and mini chocolate chips.

In a microwave-safe bowl, melt the marshmallows and butter together in the microwave for 1-2 minutes, stirring every 30 seconds.

Stir in the vanilla extract and food coloring (if using) into the melted marshmallow mixture.

Pour the marshmallow mixture over the cereal mixture and stir until well coated.

Using greased hands, shape the mixture into bunny shapes and place them on a parchment-lined baking sheet.

Allow the bunny treats to rest at room temperature for 1 hour, or until set.

Once set, drizzle melted white chocolate over the bunny treats to create a decorative pattern.

Let the white chocolate set before serving.
