Preheat the oven to 400°F (200°C).

Peel and trim the carrots, then cut them into sticks.

Peel and halve the shallots.

In a large bowl, mix together honey, olive oil, salt, and black pepper.

Add the carrots and shallots to the bowl and toss to coat them in the honey mixture.

Transfer the coated carrots and shallots to a baking sheet.

Roast in the preheated oven for 20 minutes, or until the carrots are tender and golden brown.
