  5. Add the carrots and shallots to the bowl and toss to coat them in the honey mixture.
  6. Transfer the coated carrots and shallots to a baking sheet.
  7. Roast in the preheated oven for 20 minutes, or until the carrots are tender and golden brown.
  8. Remove from the oven and let rest for 5 minutes before serving.
