Peel and slice the carrots.

In a large saucepan, bring water to a boil and add the carrots. Cook for 5 minutes or until tender.

In a separate pan, melt the butter over medium heat. Add honey, ginger, salt, and black pepper. Stir until well combined.

Drain the cooked carrots and add them to the honey-ginger mixture. Stir to coat the carrots evenly.
