Preheat the oven to 425°F (220°C).

Cut the cauliflower into florets and place them on a baking sheet.

Drizzle the cauliflower with olive oil and sprinkle with Ras El Hanout spice blend and salt. Toss to coat evenly.

Roast the cauliflower in the preheated oven for 25 minutes, or until golden brown and tender.

While the cauliflower is roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth and creamy.

Once the cauliflower is done, remove it from the oven and let it rest for 5 minutes.

Serve the roasted cauliflower with the tahini sauce drizzled on top. Garnish with fresh parsley and toasted sesame seeds.
