Peel and slice the carrots into sticks.

In a bowl, combine honey, minced garlic, olive oil, salt, and black pepper.

Toss the carrot sticks in the honey garlic mixture until well coated.

Place the carrots on a baking sheet lined with parchment paper.

Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized.
