Honey-Baked Red Onions
Red onions contain a natural pigment called anthocyanin, which gives them their vibrant color and also provides health benefits.

Preheat the oven to 400°F (200°C).

Peel the red onions and cut them into thick slices.

In a bowl, combine honey, olive oil, salt, and black pepper.

Place the onion slices in a baking dish and drizzle the honey mixture over them.

Toss to coat the onions evenly.

Add fresh thyme sprigs on top.

Bake in the preheated oven for 25-30 minutes, or until the onions are tender and caramelized.

Remove from the oven and let it rest for 5 minutes.
