  1. Preheat the oven to 400°F (200°C).
  2. Press the tofu to remove excess moisture, then cut it into cubes.
  3. In a large skillet, heat olive oil over medium heat. Add the tofu cubes and cook until golden brown on all sides.
  4. Remove the tofu from the skillet and set aside.
  5. In the same skillet, add the sliced mushrooms, diced onion, and minced garlic. Cook until the mushrooms are tender.
  6. In a small bowl, whisk together vegetable broth, soy sauce, cornstarch, and water.
  7. Pour the broth mixture into the skillet with mushrooms. Cook until the gravy thickens.
  8. Return the tofu to the skillet and stir to coat it with the mushroom gravy.
  9. Transfer the tofu and mushroom mixture to a baking dish.
  10. Bake in the preheated oven for 15-20 minutes.
  11. Remove from the oven and let it rest for 5 minutes before serving.
  12. Serve the baked tofu with mushroom gravy hot.
