Honey Baked Lentils
Lentils are one of the oldest cultivated crops and have been eaten for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 350°F (175°C).

Rinse the lentils under cold water.

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic, and sauté until softened.

Add the lentils, tomato paste, vegetable broth, salt, and black pepper.

Stir well and bring to a boil.

Transfer the mixture to a baking dish.

Drizzle honey over the lentils.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, until the lentils are tender and the top is golden brown.

Let it rest for 5 minutes.

Garnish with parsley and serve hot.
