  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the whole wheat flour, all-purpose flour, baking powder, and salt.
  3. Drizzle in the olive oil and gradually add the water while stirring until a soft dough forms.
  4. Divide the dough into two equal parts and roll out each portion into a thin rectangle on a floured surface.
  5. Transfer the rectangles onto the prepared baking sheet and sprinkle sesame seeds on one rectangle and poppy seeds on the other.
  6. Using a pizza cutter or a sharp knife, cut the rectangles into small crackers.
  7. Bake for 12-15 minutes or until the crackers are golden brown and crispy.
  8. Remove from the oven and let the crackers cool on a wire rack.
  9. Once cooled, break the crackers along the cut lines and store in an airtight container.
