Seitan is a popular meat substitute in vegetarian and vegan cuisines, known for its chewy texture and ability to absorb flavors.

In a large mixing bowl, combine vital wheat gluten, chickpea flour, nutritional yeast, garlic powder, onion powder, and paprika. Mix well.

In a separate bowl, whisk together vegetable broth, soy sauce, and olive oil.

Add the wet ingredients to the dry ingredients and mix until a dough forms.

Knead the dough for about 5 minutes to develop texture.

Let the dough rest for 10 minutes.

Preheat the oven to 350°F (175°C).

Shape the dough into a log and wrap tightly in aluminum foil.

Place the wrapped seitan in a baking dish and bake for 50 minutes.
