  1. In a large mixing bowl, combine vital wheat gluten, chickpea flour, nutritional yeast, garlic powder, onion powder, and paprika. Mix well.
  2. In a separate bowl, whisk together vegetable broth, soy sauce, and olive oil.
  3. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Knead the dough for about 5 minutes to develop texture.
  5. Let the dough rest for 10 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Shape the dough into a log and wrap tightly in aluminum foil.
  8. Place the wrapped seitan in a baking dish and bake for 50 minutes.
  9. Remove from the oven and let it cool for about 10 minutes.
  10. Unwrap the seitan and slice it as desired.
  11. Use the seitan in your favorite recipes or store it in the refrigerator for up to 5 days.
